I love reading lists. I learned a lot from looking/reading other peoples lists. With that in mind, I would like to share my list of apps that I currently use:

Productivity

Evernote

Evernote is a tool to help you remember anything (thats what their site says). You can write notes through this application and sync to all your devices via cloud. Great for note taking, research and writing. Its something like Microsoft OneNote if it was enabled with a cloud service and is multi-platform. Great interface, easy to use and best of all its free!
